    When I asked my husband why he hadn't commented on the soup and he was almost done he said it was because he hadn't come up for air. He called this soup awesome. I asked my 20 year old daughter what she thought and she said she was addicted to this soup, she kept coming back for more. I agreed with other readers about adding pasta uncooked and it cooked just fine the only problem was that 2 cups of uncooked is to much and soaked up all the juice so I just added more broth. Next time I think I'll cut it down to 1 cup or added it cook to individual bowls like one reviewer stated.

    Since I cook every day for 5 of us, this is like a vacation for me. I don't have to stir or worry that it might stick on the bottom.I doubled the recipe, cooked the pasta seperate added it just before serving. everyone loved it, even my fussy grandson. many thanks to you.

    Spring for the fresh basil to chiffonade with some shredded mozzerella as garnish and the soup will simply pop! Everyone loved it.

    I made this for the first time today and it's hands down the best minestrone I've ever had. Followed the directions to the letter and used fresh spinach. Slow cooked for 6 hours...it's be best I've ever had! Thank Robin!!

    This soup was so easy to pull together, and despite the fact that it was made in a crock pot, tasted very fresh. It seemed healthy, too. I served it with fresh bread and lots of parmesan cheese--yum! I will definitely make this recipe again.

    Very easy to make. I added 1 cup of diced fresh green beans and substitued 1 tsp dried thyme for fresh. Very good and makes a ton of soup.
