    I appreciate how easy and healthy this is, but it's not very good. After adding some turkey meatballs and red wine vinegar it was edible.

    Made this soup in a crock pot and left it cook all day while my family was at work/school. (about 9 hours. It was ready when we got home. My husband and children (even the 9 month old devoured this! Much better than any restaurant Minestrone I have had. Definatley will do this one again!

    This was so easy and very tasty. I did modify the recipe a little bit. I didn't have enough chopped tomatoes, so I used one can of tomato sauce. Also, instead of the pasta it calls for, I used cheese tortellini which made the soup a little heartier for a meal. It was super easy to make and really tasty. A real winner!

    This soup was great, better than some restaurants. I used kale instead of spinach added garlic and used about 4 cups of chicken broth instead of 3.

    I think the only reason why i went for seconds after making this recipe is because i put cheese tortellini in it. My dad agreed that the flavor was good but there were too many vegetables (I think he especially didn't care for the zucchini. My mom, who is a vegetarian and eats vegetables all day long in her strange dump soups, loved this dish. Overall I would only make this again to make my mom happy.

    I loved this soup. It had great flavor and I will be making it again. The only thing I will do differently is cook the pasta separately. I like having leftovers but the pasta became real soggy.

    I needed a vegetarian dish for a luncheon and decided to try this soup. Excellent choice! I definitely will keep this recipe. I did add a little more broth than the recipe called for because the soup was very chunky. I also added some chopped fresh basil and Italian parsely at the very end to brighten up the flavors. Even the non-vegetarians in the group really liked it.

    At first i questioned if this soup would have enough flavor. It did! This soup had great flavor with all of the seasonings in the recipe. I always read reviews first to get some tips and they are always good ones. I sauteed onions, garlic, carrots and celery first and then put it in crockpot. I added 1 cup more broth, used pasta shells, and added cooked italian sausage. I cooked the pasta shells separate and add it to each bowl when ready to eat. My picky 10 yr old ate it all (with the exception of chunky tomatoes which i picked out:. I really did not think he would eat this soup with all the veggies....surprise, surprise! My husband enjoyed it too and was also surprised with the great flavor. A great family meal! Thanks Robin!!!
