    This recipe was very easy to prepare and everyone loved it - even my picky kids. I brushed olive oil on the eggplant before roasting instead of using a spray and I forgot to put the basil on after cooking but the recipe was still a hit. I actually used 2 big eggplants for 4 people and there was not any left over. Wonderful!
