    We love olives and mediterranean flavours so suggestions for making it prettier. Perhaps stuffing the chicken with the mixture and then browning the chicken, then finish up in the oven? This was our first foray into quinoa and we really liked it! the roasted garlic, basil and roasted red pepper combo was awesome. We ate it warm but I think it might be even better served cold.

    I used some leftover olive tapenade I made using a Joy of Cooking book recipe. I just mixed in a generous amount--1/4 C. or so of fresh parsley and a few shakes of habenero pepper powder then I slathered it on and baked it up. Came out great! This was a quick easy meal for a Monday night. Also, using red quinoa adds nice color for those who didn't like the look. I myself thought it was quite pretty either way...

    Haven't tried this yet but my thought is, why not save out some of the fresh basil sprigs and garnish it with a sprig of basil and maybe a filleted sun-dried tomato for a little flare. Or what about serving it upside down and spoon the quinoa around it.

    Just an idea.

    We LOVED this recipe. The melding of flavors of the olives, chicken and quinoa was fabulous. The quinoa was out of this world. This will be our go-to recipe for quinoa as we try to eat more of this delicious grain.

    My picky family loved this recipe. I made it exactly like the recipe except that I did not add the anchovies as I did not have any and made 6 chicken breasts. Easy, delicious, and lovely presentation as well!

    No, it wasn't very attractive, but overall it was a pretty good meal. Quick and easy, next time I don't think I'll use quite so much tapenade, it was a little overpowering. The quinoa was good too, a nice change from the usual rice.

    The Tapenade recipe is GREAT. It's extremely easy and quick to make and can be a hit by itself with crackers. The chicken with the olives on top was ok... it doesn't look that great... nothing special, but it's easy enough to deserve a try!
