This was so delicious and easy to make. I did not have green chilies so I substituted a can of diced tomatoes and green chilies for the tomatoes AND the chilies, great! The fresh lime juice, cilantro and sauteed onion and garlic really made this good. Thanks, Robin, for all of your great ideas for fast and healthy meals.

This is semi-homemade done right. No weird overprocessed ingredients or strange combos- if I see one more stuffed angel food cake.... grrrr. A little change of pace but this is still simple. I would add extra onion to this but I love onion. The right bun makes this.

This was the most delicious and easy sandwich, yet it seems really gourmet!I made it for my husband on Father's Day for lunch and he went nuts over it. I added a sprinkle of shredded Mexican cheese which I would do again. I'll be back to watch more of Robin Miller!
