    Hands-down this is the best new recipe I've tried in months! I purchased an inexpensive pork loin and threw it in the crock pot all day with some garlic and orange juice. When I returned from work, I made the quesadillas and salsa (gotta have the salsa! as recommended, sans the rice. (We also do our quesadillas in a hot circulon pan w/ no oil. My kids, hubby and I thought they were out of this world!

    What a great way to use leftover pork roast! I was starving when I got home to cook this, and didn't have the patience to cook rice, also forgot the arugula, but it was still soo yummy. The orange salsa was fresh and fflavorful.

    It was amazing with the left-over roast pork and the manderine salsa added a nice sweet kick. My family raved about it, I just had to say thank you Robin.
