    I made this salad with some grilled lamb chops (loin and added some crumbled feta cheese to the potatoes for a Greek flare. Tasty to the MAX!!

    My friend's italian grandmother made a potato salad like this. It was nice having something like it again. Very flavorful. You can add or subtract whatever you want according to your taste, but my husband and I liked this as is.

    Added 1 Tbsp. of Capers and 1 Tbsp. of Caper Juice (from the bottle. This was for a little additional "bite". Also added a couple of fine shredding of Pecorino Romano hard cheese. I soaked the red onions in some salted ice water while I was cutting the other ingredients to take the bite out of them. Served warm. The herbs I used was a mixture of thyme and marjoram (what I had in the garden. Very easy to make. Looks pretty on the plate. With the red potatoes is it nice, creamy, and smooth. I would have liked a little chopped parsley also but my wife does not like parsley. It was Wonderful as made.!!

    The thyme is way to much, I would suggest using less than 1 tsp. I also added fresh moz., it helped with the overwhelming taste of the thyme - I had to throw it out! Shame it looked so appetizing on the show!

    You have made your grandma proud. It was wonderful as a side with steaks. We loved the tang of the vinegar. What a great combination.
