    Do you use fresh tomatoes or canned? In the middle of the winter on the eastcoast of the US the tomatoes are not that good, so I'd like to use canned seasoned tomatoes. Any good?

    I grill my bread first with olive oil. I also add onion to the mix with fresh garlic...nothing is better than fresh garlic. This is refreshing when you grill any meal with the fresh tomatoes. I also usually top (when the bread is nice and hot with mozzarella cheese and then add the tomato topping. Then add parm on top of the tomatoes. I have made this for YEARS and even the kids love it.

    Fixed this one to go with grilled chicken -- used 2 cloves of garlic minced instead of garlic powder. FANTASTIC - as usual with Robin's recipes, my husband was ready to eat more as soon as the plate cleared. Thanks, Robin, for making me look like such a great cook. Becky

    This was a nice, easy compliment to the "Basil-Marinated Chicken" recipe that we made. To make it even faster (and because the tomatoes at the store didn't look that great, we used a can of organic chopped tomatoes. Worked like a charm!

    It was the best recipe I have tried the only difference is that I added fresh romano and parmesean cheese to it.

    I've tried a number of bruschetta recipes, and this one is just right. The only change I made was using fresh minced garlic instead of garlic powder. It was a hit!
