I use sun-dried tomatoes, Mediterranean herb feta, lemon, and a bit of the oil from the tomatoes. Yummy!!!

I made this salad this morning to take camping this weekend. It looked so good I just had to taste it beforehand. It was incredibly delicious!! I had doubled the recipe and my mouth just watered as I ate it. I had to go back for seconds!! : Will try adding the feta cheese in the future, and I think that a good mozzerella would go well in it also.

This salad was pretty good, although I felt that the red wine vinegar flavor was a little too strong -next time I will use a little less than called for. After reading other reviews I decided to add feta cheese and I think the feta is a must to give it flavor. Make sure to put this salad in the fridge for at least a few hours for the flavors to blend - overnight is even better.

I thought that the ingredients looked bland as is, so I tweaked it. Now, it's a favorite dish and my husband (who doesn't like orzo loves it! I didn't have fresh basil the first time, so I used arugula (which is great in this. I've also used basil. I added crumbled feta and lemon juice and a lot more tomatoes than it called for. I use a combination of cherry and grape. I always cut the tomatoes which helps with the flavor. This tastes best when it gets to sit in the fridge so the flavors can mingle. We eat 100% whole wheat orzo, which adds a nice touch.

This was super easy and quick to make, chopping and stirring it together. I substituted red wine vinegar for balsamic and it was awesome!

I really liked this recipe. I just changed it around a bit. Instead of the vinegar I used lemon juice. I didn't have fresh basil on hand so I used parsley in it's place. I also added some diced avocado. Will definitely make again.
