I had leftover pork from a roast that hadn't gone over well. I shredded it and tried out this recipe. It was absolutely delicious!! Even my 2 year old asked for thirds.

I seasoned the Pork Tenderloin and cooked it in the crockpot. When I got home from work the meat was already cooked. I followed the recipe, except I used iceburg lettuce. This was a fast and delicious recipe. My family loved it! Thanks, Carol

What a delicious way to use leftover pork roast. The radicchio is a nice change of pace for my husband and me - recipes like this help us add a little variety to our diet in a fun, easy way.
