    Made this last night and my boyfriend and I both loved it! I've never roasted anything or made couscous before, but this recipe was so easy to do and is worth trying. The only thing I did different was instead of roasting garlic cloves, I used minced garlic and it was still a delicious dish. I still wrapped it in the foil and roasted it the way the recipe calls for, but not sure on how much I used since I just eyeballed it. I would say use as much as you want. =

    Very good dish and very simple to make! I used Israeli couscous for this dish and it took a little longer to soften than the recipe indicated. I loved the flavor of the roasted garlic and corn! I will add more garlic to this dish next time because the garlic flavor was very mind with 4 roasted garlic cloves.

    This is very simple, easy to make - I've done it w/ & w/out the pimentos - like it both ways - we make it often!

    It's my first time trying couscous. I love this recipe, it's so flavorful. I add black olives and grill shrimps. Fab!!

    This was delishious! I used garlic & Olive Oil Couscous and added garlic & Olive Oil as well and a pad of butter and followed the rest of the directions. I ate two dishes! Quick to make too!

    This was only my second time making couscous. Super easy. When reading the recipe, I was concerned that the roasted garlic would be overpowering, but it wasn't. Next time I'll add a couple more cloves of garlic.

    I used extra garlic and scallion with frozen corn and no pimentos. My husband (who doesn't usually like couscous is already asking me to make it again. Great simple side dish.
