    This really is simple and delicious! I used sour cream with fresh dill instead of tomato topping. Broccoli with fresh grated Parmesan tasted great, too.

    To be honest, I've stayed away from cooking salmon because I never thought I could get it to taste as good as a resaurant could. This recipe is so simple, so easy, and so tasty; even the kids ate every bite. I served regular white rice with some sweet basil and a teaspoon of lime juice.

    This recipe is not only one of the best tasting salmon recipes I have ever tasted, it is absolutely the BEST tasting. It also is a recipe that will fool your family or guests into thinking it was really difficult and extremely "gourmet". I love this and will make it at least once a month. I live in WA where salmon is as available as rain so I am always looking for new recipes to use this great fish.

    We are not huge fish eaters and salmon can be strong in flavor. However, the blend of flavors added with the rice, tomatoes, capers, and basil really blended well. All of my family finished off their salmon. The cauliflower went well, but was a bit bland. Then again, I can't think of a time that our family has ever just had cauliflower. We will definitely do this dish again, but maybe with a side other than cauliflower.
