Ingredients
- 2 teaspoons olive oil
- 2 cloves garlic, minced
- 2 cups fresh or frozen green beans
- 1 (4-ounce) jar diced pimentos
- 1 tablespoon balsamic vinegar
- 1 tablespoon water
- Salt and ground black pepper
Directions
Heat oil in a large skillet over medium heat. Add garlic and cook 1 minute. Add green beans and pimento and cook 2 minutes. Add vinegar and water, cover and steam 3 to 5 minutes, until green beans are crisp-tender. Season, to taste, with salt and pepper.

I just found out that my bf is a boarder line dibetic and now I have to start cooking healthy foods for him, as for me it would not hurt.I like this.

The green beans were really good and easy! I'm not a big pimento fan, so I substituted roasted red peppers chopped up instead. I think they taste best at room temperature instead of hot too!

after I added about 5x the vinegar and steamed them longer about 15 or 20 minutes they had a lot more flavor.presentation was beautiful. that is why I tried it in the first place.
