This is a tasty and easy recipe. The only thing I would do different next time is add more bok choy (1 more cup and more broth. Also, if you decide to cook on high make sure to not overcook - check it after 4 hours to make sure it's not dry. I didn't have instant Jasmine rice, so I just use regular jasmine rice, 2 cans of light coconut milk, and about 1/4 cup chicken broth. Turned out great.

I love this recipe. Its so easy to make. Ive made it 2x already. Its great for a lot of people as well as just for 2. If its only going to be my husband and myself, Ill make enough for leftovers for the next night. I usually prep it the night before and the juices are absorbed more into the chicken and then put it in the crockpot the next morning and I have a full cooked dinner when I get home. I find if I use boneless chicken breasts, it only takes about 2 - 2 1/2 hrs rather than the 4-6 it lists in the recipe.

This was one of the best crockpot dinners I have ever made. I thought, after the first taste it was too spicy (hot, hot but by the time I finshed it all I can say is how delious it was. Twice as good the next day. I broke up the chicken and it became like a hearty chicken stew. Will make this one again very soon. Thanks for the recipe, Robin.

The flavors were good but lots of watery broth. We liked the heat of the curry paste just fine. I didn't make the coconut rice but it probably would have tasted less bland and better over rice. Don't think I will make it again. I am going to squeeze some lime juice over the chicken dish as another person suggested for some zing....

Like some of the other reviews had mentioned, the dish seemed a little bland to me. I had used the same red curry paste before in another dish where I just had it with coconut milk over chicken and veggie stir fry and I thought it was super hot then, so I'm not sure what seemed to make this chicken dish taste more watered down. Anyway, I fixed it by adding more ginger plus lime juice. I thought the zing from the lime brought out more of the spice from the curry. My boyfriend and I enjoyed it after the small additions. It's very easy and quick to put together, but like another reviewer said, it just needs some tweaking.

This is a delicious dish--so different and so easy! When I prepared it, though, it turned out more like a soup--still super yummy, but with more liquid than I anticipated (guess I should have known, since this is a slow cooker recipe! Anyway, I embraced the soupiness and added the rest of the can of chicken broth I had opened for this recipe--it made an amazingly delectable red curry chicken soup, complete with spicy broth and cooked vegetables! I will definitely make this again!

I tried this recipie after seeing Robin make it on her show. Several of the ingredients I had never had before, and since I was in the mood for something new I figured why not. I was pleasantly suprised. This is a really good meal. It feels very healthy. I had trouble finding all the ingredients though. I could not find any sake, but I think that is more because they had no idea what I was talking about at the liquor store. I also did not have a crock pot big enough to fit it all in, so I used my big soup pot on the stove on med-low. It cooked in about 30 minutes. The rice is AMAZING. I thought the pudding seemed a bit rich, so instead I used the leftovers the next morning for breakfast with a bit of brown sugar and butter. A warm satisfying breakfast.
