    This dish is very tasty. I was hesitant to try it but wanted to used up some chile adobo that I had in the refrigerator, and I am so glad that I did. The tanginess of the lime is what did it for me as far as taking the flavor to the top, and of course the cilantro and scallions make it delicious, too. I think I'll make a little extra sauce next time as everyone was tipping the crockpot over to get all that they could.

    I'm usually disappointed with slow-cooker recipes, as they usually smell wonderful, but taste bland. This was a nice surprise; the dish has some complex, delicious flavors. Not only that, there was no need to sear beforehand; everything just gets put into the slow-cooker at one time, and that's it. (Of course, the rice needs to be prepared separately. My husband LOVED it, and it was the perfect antidote to a tiring day.

    whenever i make a recipe i have to cook a veggie version ( some vegans in the house so for the veggan version i chopped all the vegs as the recipe. But in a pan sauted them for about 5min added the fire roasted tomatoes and lime juice, garlic and chipolte peppers and adobe sauce. Then simmered it all for about 25to 30 min.(forgot it reallyomg it was delicious better than the meat version the flavors were so much more pronounced and vivid. from now on when i make this i will also make the meatless version to go on top of the chicken. fyi there is a unsweetened coconut milk that make the rice creamy without the sweetness.

    VERY easy to make and full of flavor. I would recommend only 1 cup of coconut milk, an entire can was too creamy for my family. This recipe is a keeper!

    I made this tonight and doubled up on the veggies, lime & chipotle. I also did have thighs w/bones & boneless skinless breast. Not only was it delish it was beautiful. Everyone loved it!!

    A wow, I made it for my wife, who does not like dark chicken, and she was impressed. I added mushrooms, grape tomatoes and sweet red pepper and doubled the chipotle. Done in three hours to the minute.

    For a crockpot recipe I have to give it 5 stars ...my Husband loved it and having an entire meal ready when he walks through the door is a big big bonus! The flavor of the chicken in the sauce improves the next day and the rice and beans are a must (whether you need to add salt or not.
