    This dish is absolutely delicious! I only made the chicken, not the rice. I added almost a whole can of chipotle chilies, used crushed tomatoes instead of tomato sauce, and diced up a red pepper. Will be making this dish again for sure.

    We all loved it! The key is the right amount of lime and salt to really bring out the flavors. Once I tweaked it right, it was perfect . . . oh, and the carrots add just the right sweetness.

    I made this today based on all the rave reviews and I didn't care for it. There was something about that tomato sauce that gave it a weird taste.

    It was easy... I made a HUGE FAUX PAS... Used raw beans instead of the cooked/canned beans... in that case I should have let the beans cook up first and then added the rice and seasonings... but after a few hours my beans are nice and tender... finally !

    I love this recipe. I make it almost once a week. The thighs are so tender and juicy and the adobo sauce gives it a unique and delicious flavor. I serve it with brown rice. Delicious and easy dinner and great left overs!

    We really enjoyed the rich sauce and how flavorful the chicken was in this dish. The fact that it's a crockpot recipe sweetens the deal. Will definitely make again.

    Thankfully I read the other reviews and made adjustments. More veggies, fire roasted diced tomatoes, and a tad more chipolte and adobe sauce. Took a chance on out of town company and it was a BIG hit. My guest is a restautant owner from Alaska and she is taking the recipe home with her.
