    A wow, I made it for my wife, who does not like dark chicken, and she was impressed. I added mushrooms, grape tomatoes and sweet red pepper and doubled the chipotle. Done in three hours to the minute.

    For a crockpot recipe I have to give it 5 stars ...my Husband loved it and having an entire meal ready when he walks through the door is a big big bonus! The flavor of the chicken in the sauce improves the next day and the rice and beans are a must (whether you need to add salt or not.

    This was delicious! I halved the chicken and tomato sauce but kept the rest the same. The chicken was spicy & limey while the rice was creamy from the coconut milk. My husband told me to make it again. And I will!

    What?! Who gave this 4 stars???
    This one is NOT just in my family's Top 10, but it's our NUBMER ONE favorite by ROBIN MILLER.
    The combination of flavors is amazing.
    My only changes to this are... 1. I only use 1t of adobo chiles it's really spicy stuff(freeze the rest in tuperware for later use, & 2. I eliminate the celery and leave the carrotts in BIG chunks so they don't overcook.

    This is so amazing. Easy on the minced chipotle chiles in adobo sauce because a little goes a long way. The first time I made it I added the entire (Tiny 1 oz can which is just a bit more than the recipe calls for and it was quite spicy which is fine with me. I've made this numerous times and it is a hit every time.

    Easy, tasty and awesome. I've debated adding a small potato, for a little starch flavor to the sauce. but it's already served with rice. I see some people saying rice was just okay...To make it more flavorful, I sautee some onion garlic and green pepper in olive oil first, then follow recipe and add a dash or 2 of adobo(seasoning not pepper or sauce to salt and pepper seasoning stage. And serve chicken over it. Delicious!

    Using 2 10oz cans of diced tomatoes w/ chilies instead of tomato sauce, and bumping up the chipotle and lime makes this a keeper.

    spicy, flavorful, complex - substitutions: diced tomatoes w/ cilantro and lime in place of tomato sauce, increase to 1/2 c. lime juice and 1/2 can of chipotles (AFTER ALL IT IS CALLED CHIPOTLE-LIME FOR A REASON, 4 garlic cloves. i basically doubled the spices and agreed with other reviewers tomato sauce sounds weird in this recipe. Not technically 'jamaican' tasting in any way...... maintain original chipotle if you dont like spicy food. with substitutions tastes ABSOLUTELY PHENOMENAL. will most definitely keep handy!
