Add red and or yellow pepper for some color. Toast the walnuts with some garlic powder or w/o on the skillet for more depth of flavor.

I had to make a very large salad for a three family get together last night, so made two of these, one adding blue cheese and apples, along with some sunflower seeds and pine nuts, toasted, and another bowl without the blue cheese. One family, I found out, does not eat salad, so I ended up with the bowl without cheese, that I had tossed with dressing, not being eaten. I sauteed it the next night as is, and it was wonderful and sweet. Two of my kids and my husband liked it better that way! I like it both ways.

Funny...this is almost the exact recipe of mine that's been in the Top 10 on Allrecipes.com for the last several years, only the pomegranate juice have been added, and the almonds substituted for walnuts.

I served this salad with my Thanks Giving spread. It was perfect! Very easy and quick to make and was delicious
