Just made this and was suprised how flavorful the mardinade meat and veggie mixture was without having to mardinade overnight. The guac recipe is one of the best, but added a few tblsp of red onion for an extra kick -- even better the second day! Just place plastic wrap right on the quac to prevent discoloration.

I only made the guacamole but it was absolutely perfect! So much wonderful flavor!!! I used a spiced can tomato for a little extra kick. We ate the entire bowl within 15 minutes... will def make again really soon!!! In fact, my brother is graduating high school this month and my parents requested I make it for his open house!

With exception to the odd flavors of the allspice and cloves (which I would leave out next time the fajitas were very tasty with the bell peppers and onions. The guacamole was delicious inside the tortilla too!

    Will definitely make again!

I can't imagine, why in this day and age, a cooking show would use an awful product such as corn syrup for a "healthy meal!" I understand that packaged products use a lot of corn syrups - for shelf life, etc... (that will be changing - thanks to people becoming more aware of how bad they are... but a cooking show should NOT be promoting sugar - corn syrup in a dish such as this! On TV, this woman says the corn syrup will give the onions a nice sweet taste when they become carmelized - ONIONS become VERY YUMMY & SWEET without that crap! It really makes you wonder how qualified this woman is!

After all the negative comments regarding those cloves & various seasonings, I purchased a Jerk marinade at the store. I coated the meat & left it covered for about an hour. I seared the meat on both sides in a grill pan then tranferred the meat to an outdoor grill. My cooking time was a little longer because the flank steak was pretty thick, but the meat fell apart and was so juicy. My mother, husband and all 3 kids thought it was the best they'd ever had. I had never cooked fajitas before and appreciate the easy instruction. With a little tweeking, these turned out great. Even good cold the next day! I don't think I'd go for the cloves though. I'll stick with the store bought stuff that's more like a true Jerk flavor.

My family loves these fajitas. I didn't use the jerk seasoning for the steak but marinated it myself. It still came out fantastic and is now a family favorite in my household. This is a great way to get the kids to try new vegetables.

I love the idea of using leftover flank steak for something different a few nights later. I actually did not use the original jerk recipe becuase of all of the bad reviews but thought I would try this with my left overs. My original steak marinade already had the red wine vinegar and soy sauce in it so I thought that it would taste the same. I marinated the onions for about 3 hours but the steak for only about30 minutes and I am glad that I did. The steak was good, a little tough, but that is to be expected from recooking leftover steak. I loved how the onions and peppers had so much flavor but the vinegar flavor was much too strong. Over all it is a great idea but I think I will stick to my steak marinade to use for the onions and peppers as well. love your show though!

I love Robin Miller's approach to prepping on the weekend and then just pulling everything out during the week and throwing it together really quick. I tried her steak fajitas and quacamole. It was the best I have ever had - better than mexican restaurants - and super easy! My husband is not a huge guacamore fan, but did like this recipe. My oldest daughter even tried it and like it. Good way to get vegetables in!
