This hash was palatable, but overall very bland. Next time will add more seasoning and more red wine vinegar. Good place to start tho.

This sweet potato hash goes great with the Blue Cheese Stuffed Turkeyburgers. I like to use different cheese, it's a great way to change up the taste.

I made these for a family Fourth of July breakfast. Everyone seemed to enjoy them very much. I will say, though, that using the microwave to cook the potatoes first wasn't much of a success for me. (Then again, I do have an old microwave. However, I ended up putting the sweet potato in the oven and that worked just fine. I would make these again.

Wonderful recipe: very few and common ingredients, super-fast, amazing taste.
