Everyone loved this, I made this quickly one late afternoon. It came together quickly. I used extra virgin olive oil instead of peanut. I've made this a few times now, once without the potatoes. And it still is great.

This was so easy. I found it to be the perfect combination between salty and sweet, we loved this dish and it came together so quickly.
