    I made these last night with some leftover chicken and they were delicious! I added about 1/2 tsp liquid smoke, used empanada disks (brushed with egg wash and added a about a tbsp of cream cheese. A quick, easy and tasty way to use turkey or chicken leftovers.

    These were fantastic. I screwed up and used puffed pastry dough. Turns out to be a HUGE advantage. They were VERY tasty. SOOO MUCH BETTER then turkey soup! It did make a lot of leftover stuffing, tomorrow we are having them in tortilla shells with cheese on top. I am also considering having it in taco shells. This was SO SO SO GOOD!!!

    Thesse turned out great! I had a smaller circle cutter so I made empanaditas instead-took about 30 minutes ish to make them all. For the comments not liking the dough: opt for a different brand. I've found the pre-formed store bought dough (the kind in the silver foil pie tins are dry and don't taste that great. I'm a fan of Trader Joe's pie crust (they come in flat circles and you can see flecks of butter in the dough or Pillsbury pie crusts that you roll out. They tend to be a lot flakier and closer to homemade. I rolled my dough out to be a bit thinner and the ratio of dough to filling was perfect for me. Also, I did have a lot of filling so I used a second crust. We ended up with about 24 and froze half for a cocktail party we're hosting later this month. The filling also freezes well on it's own. Definitely making again! A great alternative to the usual turkey soup and turkey a la king recipes we used to use in order to finish off all the leftover turkey!

    I make these all the time. I love the pie crust. There is alot of filling left so I made bigger circles! I have used turkey, steak, and chicken. Awesome Robin. They are a regular in my house.

    I agree that the crust was a little on the dry side and we had to use a sauce with it. My three year old loved it until she bit inside and said the beans were too spicy.

    For us, I would make it again but puree the beans and add slightly less cumin. It does take a bit longer to make, so after the second time, I'll see if it's worth it to put the effort in.

    This is absolutely terrible - worst recipe I've ever tried on food network. I don't bake often but seriously.Too much filling as one commenter said. And I don't know why the crusts are supposed to work, but they're just too dry to even make a decent go of it. I would recommend they remove this from the site. It is a blatant lie that it is a Quick Fix recipe. If you try this recipe, prepare to be disappointed. It is 45 minutes after I started making dinner and I know I am. BOOOOOOO.

    I made this recipe as an appetizer. Did not have turkey so I used 4 chicken thighs. Because I had read some of the comments about the shell being too dry I chose to use "empanada shells" they can be found in the spanish frozen section of your grocery store. With 4 things this recipe makes about 20 empanadas and they freeze great too for later use.

    My husband said 'we should put this in our roster of regular recipes' - he really loved it - and it was so simple to make! My 3-year old, really loved helping make these too. Delicious!

    Once I prepared the filling, it looked to be way too much for the mini 4 inch circles the recipe suggested. I had already cut out the circles, so I added a can of corn, more salsa and put the mixture into the bottom of a 9 X 13 pan and layered the pie crust on top. Just as other readers have mentioned, the mixture looks very dry. I'll probably eat my "casserole" with sour cream. The flavors are good, but I don't think the empanada idea worked well. Most other recipes I searched mentioned using phylo dough instead of pie crusts for those of you who don't like the recipe so doughy.
