I loved this recipe. I doubled everything since I was using a whole turkey, but still could've used a little more broth as it was very thick. Prep time was a little longer than 10 minutes but the flavor was spot on delicious. I will definitely make this again.

I decided on this recipe because I couldn't get ahold of my grandmother. After making it, I felt instantly transported back home. See, this year was the first time not being with my family for Thanksgiving. And after eating this soup, it reminded me of all those years making Turkey Noodle Soup with my grandmother all those years. Thank you :

My grandson just loves this soup. He often asks for me to cook a turkey breast just to have this soup from the leftovers.

Egg noodle is a popular in Vietnam and many countries in Asia. This ingredient can make many delicious dishes. You simply can not resist them. But instead of egg noodle, Vietnamese like to use rice noodle. Rice noodle can be used in soup, salad, stir fried ? one of famous dish I bet you will love: Vietnamese PHO. But it take you lot of time to make rice noodle. No worry now, it?s on shelve. I was absolutely thrilled to find this Vietnamese Brown Rice Noodles called Happy Pho ? it only has a few organic & all natural spices, brown rice, organic green tea, water and salt. That?s it! No hidden gluten. It takes only 10 mins to cook. And most importantly, tastes amazing! I came across their demo at Bryan?s in Laurel Village. But apparently they?re in Whole Foods Oakland. I make that soup using the turkey carcass, but I use different vegetables. I like to use bock choy, some Japanese miso and sliced ginger. Sometimes I use peas, but I like to put them in the soup a minute before serving so the peas "crunch" in your mouth.

I did not have leeks so I used one onion. My family loved the soup. The soup's favor was lilke having Thanksigiving dinner in a bowl.
