This had a delicious flavor. I made a great turkey stock from the Thanksgiving carcass, so I had a good head start. It made 6 cups, and I bought a lot of extra chicken broth based on comments. I probably used a total of 10-12 cups of liquid, because the noodles did soak up a lot of the broth and made it too thick. I also had fresh thyme from my garden.
The leeks gave the soup a lovely sweet flavor that plain onions would not have, and my daughter, who doesn't like onions, didn't even realize she was eating something similar. I made garlic bread to go with, and this made a very un-Thanksgiving-like hearty meal. Kudos!

I just made this very good soup. I did leave out the peas because I just don't like them, but added my own touch and now will serve about 8 people. Very simple to follow and the end result wold make everyone happy.

Really easy to put together! I left out the peas and added zucchini. I wasn't to particular about measuring the garlic and thyme. This soup has great flavor and the leeks do wonders. I'd never cooked with them before and they really mellow with stewing. My husband, who doesn't eat veggies much, really enjoyed it too.
A lot of people complained about the thickness, but I had plenty of broth with the specified amount of chicken stock.

This soup was very good, and definitely helped me use up the remainder of our Thanksgiving turkey! I didn't have thyme on me so I added a couple of fresh rosemary sprigs instead, and I didn't have leeks so I substituted them for a couple of onions. As my DH and I like our heat and flavour, I added a lot more garlic (an entire head of garlic to be exact, a lot of freshly ground black pepper, and a couple of dashes of tabasco sauce, and it was oh so yummy! I also like to sneak in veggies in these one-pot meals, so I added more carrots and celery than asked for and added corn as well. Like other people I had to add a few cups of water (i had no extra chicken or turkey broth too add because it was just way too thick. Definitely will make again next time I cook a turkey!

What a great , easy recipe. Made with shredded rotisserie chicken. Made tons. Did use lots more chicken broth than suggested (probably double what the recipe called for as was way too thick. Make sure you have more on hand to add if you need to. Am planning on bringing some to my daughter in college. Soup is always a good reminder of home and Mom's cooking.

I have never been able to get turkey soup to taste quite the way I hoped. I used less thyme , added large chunks of potaoes and added extra stock. Excellent!!!
We will be having this often.

I added onions & diced potatoes. I used just a 1/2 tsp. of fresh thyme after reading the reviews. I also Added 8 additional ounces of chicken stock. This was REALLY GOOD! It was the BEST the next day! Highly recommend!

I made this soup with my leftover Thanksgiving turkey and it was a big hit with my family!! The only thing I changed was I added leftover gravy and corn. Yummy!!
