    Delicious and totally Halloween-appropriate! I hand-cut out ghosts with the tortillas and they were very cute. The dressing is simple get surprisingly tasty. Plus I love beets so this salad was quite appealing to me. Also very healthy!

    I had goat cheese on hand so decided to try this recipe. I also added dried cranberry's and slivered almonds. Added juice from a squeezed whole orange and the zest of the orange to the dressing.Turned out very flavourful and delicious!
