This was so satisfying & tasty! I gave it 5 stars because it's difficult to find excellent vegetarian dishes-I'm trying to institute meatless dinners a few days a week for health & environment's sake.
I could not find the Lima beans at my local Whole Foods, nor did I have the ground coriander in my cabinet so those were omitted, but the dish was still great. Next time I'll of course add the Lima beans but I think I'll still omit the coriander.

Delicious, but a little expensive to buy all of the spices if you don't already own them.
As with all recipes, it is open to interpretation: I substituted the pickled jalapeno with half a fresh jalapeno, and cut the hot sauce in half to compensate. I also added double the couscous, because my family enjoys a thicker chili.
Excellent recipe, and I will definitely make it again!!

So good. My husband and my brother both loved it even though they complained about it not having any meat. I served it over rice instead of the couscous and sprinkled the cheese on top.

Very good. It has a lot of kick to it and is spicy. You can't even tell there is no meat in it. lol

This is a great party recipe! If you don't know if a guest might be vegetarian, this is the way to go. I made this chili along with a Paula Dean recipe for cornbread for a holiday cookie exchange party last week. Since I had ~ 15 people coming to the party, I tried to double the chili recipe. I couldn't double all the ingredients for my crackpot, so I only used 4 cups of broth and 1/2 cup of couscous. It turned out delicious! Everyone enjoyed it and asked me for the recipe.

Finally, my search for a vegetarian crockpot chili is over! This was simply amazing, easy, healthy and delicious. Vegetarian chili is hard to muster after being a meat eater for 35 years. But, this one takes the prize. Now, I bet you can add/delete items to her recipe-or follow it exactly-and it will still be awesome. My advice after failing at a million veggie chilis is to use the spices and amounts she recommends. And, I used tomato sauce instead of diced tomatoes, and DID NOT ADD couscous..just used half the broth (No chicken chicken broth of trader joes...Thanks Robin!!!

I have the chili cooking now. I don't understand why people are getting offended about the whole chicken vs. veggie broth. Use whatever you want! We're not vegetarians so we can use chicken broth without feeling guilty or offending anyone.

Loved the taste. Used a little less couscous and cut my vegetables larger to make it chunkier.
    Quick and easy!!!!
