Why don't people realize it's not vegetarian if it has chicken broth in it?!?! This drives me crazy!

I have been making turkey chili for years and was looking for a lighter, vegetarian option. I made this exactly as the recipe directed, EXCEPT for substituting vegetable broth for chicken broth and it was really tasty! I served it with lime wedges, tortilla chips and a sprinkling of cheese. Will have to try the avocado topping that someone else suggested, yum!

I love Robin Miller's recipes. They are fast, easy, delicious and so good for you. I made it along with the cornbread she paired it with, and that was a winner too.

I used dried beans instead of canned, and water instead of broth. Gave it such a nice, well rounded heartiness to it that you just can't get from canned beans. I cooked it in the slowcooker, added frozen corn kernels and fresh cilantro just before serving, and topped it with diced avocado and light Monterrey jack cheese for serving. This was fantastic! I'll be making this again.

This was such an easy recipe to make. And the addition of the couscous was a great idea. I'll often find recipes that I love, but they don't pass the family test. This one pleased everyone, from my 1.5 year old to my husband and everyone in between. And to quote my 4.5 year old, "Mom, this meal is a winner."

Don't usually lke this type of dish, but this is really good! Best with the cilantro and cheese...really adds flavor...also the cumin is a nice taste. Makes plenty and freezes well.

This is a really good meal for a weeknight. You definitely need the fresh cilantro and a dab of sour cream. It made 11 cups at 152 calories per cup!!

This is a nice vegetarian dish. For those of you who give low ratings just based on a simple substitution of vegetable stock for chicken stock it's unfair to the rest of us who are looking for reviews on taste and ease of cooking.

This recipe was super easy to make and was really delicious!! It's also good with tortilla chips as a snack! I forgot to add the couscous...was just as good without it, although I can't wait to try it with it!
