    This is so so good! I sub corn for the lima beans and add more cummin and seasonings. YUM!!

    My 12 year old has decided that she is a vegetarian and I try to cook 3 meals a week that don't need to be changed for her. We all loved this chili, even my non veggie eater, ate it.

    i loved this chili recipe, i found the more vegetables the better...very delicious....I love vegetarian cooking, i just feel it is much more fresh and exciting ....please feel free to check out my blog where I have lots and lots of very tasty vegetarian recipes....happy eating!!

    Tried this in a slow-cooker only, but I like the taste much better when all the veggies are first sauteed and then added to the slow cooker. I substituted quinoa for the cous cous and the texture it added almost made me think that some kind of ground meat had been added while I wasn't looking :^ Good stuff!

    This recipe is so delicious and super easy! I threw all the ingredients in my slow cooker, set it, and forgot about it! Had a few glasses of wine, and a few hours later - dinner was served! It is such comfort food, and it is very healthy. I can't wait to have leftovers tomorrow!

    i tweaked the recipe a little by adding yellow, green and red bell pepper. i used fresh jalapeno instead of the pickled ones.

    this recipe is so easy to make. i bought a slow cooker and i thought i would never actually use it but i'm really glad i found this recipe.

    it taste great! full proof. the couscous is a perfect addition as well. it really gives it a nice texture.

    the first time I made this I didn't have the time to make in slow cooker. Followed the recipe and we all loved it. I tried in slow cooker and didn't like it as much. We also decided that the couscous ( I try to maintain a low wheat dietcould be replaced by polenta (served on the side..either grilled or fried then crumbled. It's great now..5 star for our family with the changes.

    I made this chili and wasn't going to buy a whole jar of jalepeno peppers, to use just a few, so I used 1 tbs of chili in adobo sauce, that I had froze from another recipe. I don't like lima beans, so added a can of corn.
    The consistency was good.
    Don't know if I'll ever make it again or not.

    I thought this was a great recipe, although I did make some changes based on what I had on hand and what I like. First, I don't like lima beans and I didn't have cilantro so I simply eliminated them. Also, instead of Vegetable or Chicken stock, I used V-8 juice (I also reduced it to 3 1/2 cups. I don't have a crock pot so I brought to a simmer and cook it on the stove for an hour before adding the cous cous. It made a thick and hearty meal for 4 and great left overs.

    This is a very easy recipe. I am tring to follow a vegan diet and found this recipe fits the bill if you use vegetable broth instead of chicken. For toppings, I will use a soy based shredded cheese or a soy based sour cream and some avocado. Yummy! I also sometimes add a drained can of corn when I put the couscous in. Everyone in my house loves it and I make it often. I have made if for company and for potluck parties and people often ask me for the recipe.
