This is not a vegetarian chili. Just because it is meatless, doesn't make it vegetarian. If you are using chicken or any other meat stock, you might as well eat the meat. I tried it with vegetable stock and it was just so so. Basic chili is good chili. This was bean soup.

I made this for a bunch of guys - it was a hit!! I put it in the crock pot and went out shopping. I served with warm bread and some sliced cucus and tomatoes. Nice hearty meal.

I made this for some vegetarian friends and they loved it. I ate leftovers for several days and they seemed to get better as time went on...

which is good since the recipe makes a ton. i split it into 3 different batches and froze 2 containers. defrosted w/out a hitch. actually makes a fantastic hearty dip if you drain a bit of the liquid.

I got all the ingredients in the crock pot in 15 minutes and it fills the house with great smells, and it tastes great too.

If you like lots of veges and beans in your chili, this is for you! Made a very large quantity, though, which barely fit in my crock-pot. I would cut the oregano down to 1 tablespoon, and I had to thicken the chili with corn starch and water at the end because it was too "soupy" for chili. Did not like the addition of couscous; perhaps that should be a side dish.
