    Both my husband and I are vegetarians, and are familiar with all the ingredients in this dish; but for some reason this recipe just doesn't come together well. We have deleted it from our files and will never try it again.

    Ridiculously good and easy. The carrots and the squash still had a little bit of a crunch to them at the end. I like them that way, but if you don't might I suggest throwing them in with the sausage in the beginning.
    This is really a pretty easy going recipe, I've added and dropped a few combinations of ingredients (depending on what I had in the house and if I felt like going to the market and it's still been absolutely delicious every time!

    I made this and was pleasantly surprised at the result. I do have to admit that its major downsides are that it's quite expensive and time-consuming. But now that I've seen the result, I'd feel comfortable trading out the more expensive ingredients (marinated artichoke hearts, asparagus, saffron with more reasonably-priced ones (mushrooms, sweet peppers, green onion and I'd be really interested in hearing what others have done to this end. I added another clove of garlic and I might add another one next time. I couldn't afford saffron so
    I skipped it and I still think the dish tasted really great, although I believe that saffron can make the dish amazing. It definitely needs to sit for a few hours or even overnight, which makes it a great dish for parties or potlucks since it can be prepared in advance. The rice turned out a bit mushier that I'd like so I might undercook it a little next time before adding it to the vegetable mixture. I didn't have parsley so I used cilantro and enjoyed it. I definitely see myself making this again.

    I made this recipe last night and LOVED it! With the strong flavors of Asparagus & Artichokes in this recipe the key is to eat bigger bites to blend all the wonderful flavors! We've got 3 younger kids and they all ate it! I added a dash of Emeril Essence and salt & pepper and used an Italian Turkey Sausage which really spiced it up. I also didn't have peas, so didn't include them. I have to say my very favorite part is the green rice - I NEVER would have thought lime/cilantro would taste so good. This is a recipe I will be keeping.

    Made this recipe several days ago and thought it was horrible when I first tasted it (right after making it. I left it on the stove and came back about 5 hours later and the seasonings had really soaked in and it was delicious! I didn't use the veggie sausage and it turned out great despite.

    This was good, but a little bland for my husband and I, he said the leftovers tasted better once the flavors had time to meld together. To me, all of the work AND expense just weren't worth it. We liked it, but probably won't make it again.

    i made this for my family, and they absolutely adored it! i personally couldnt stop at just one serving of it....

    i did omit the peas,soy sausage, and saffron. However, i recommend adding the saffron, i just simply did not have it at the time.

    in addition i threw in some garlic powder and crushed red pepper flakes for some extra spice.

    I am so happy I tried this recipe, it was absolutely wonderful, quick and easy to make. The only change to the paella I made was to use turkey sausage instead of using the soy sausage. I used all the vegetables she did and they do go together in this dish. I also loved the green rice, only I used white rice and instead of pickled jalapenos I used pickled banana peppers and even added an extra tablespoon of them. Don't skimp on the lime zest either. This rice dish is fabulous and I think it would compliment any meal especially grilled fish. Robin has a winner with both the paella and the green rice recipes! Thanks.

    I made a few alterations. I started by sauting garlic, onion --and added diced green pepper. Added the can of tomatoes. Added the veg broth, then the saffron, but used uncooked rice therefore adjusted the amount of broth. I cooked the veggies separate, sauteed with more garlic and some red pepper flakes & salt. (I didn't use the carrots or aspargus because they didn't seem to "fit" the paella taste. Also cooked the sausage separate (I used "Tofurky" which turned out great. Then, when the rice was done cooking, I combined the rice with the veggies, but also added sliced green olives with pimento. Using real saffon is key!

    You do not have to feel guilty about eating this. Looks good and good for you. I loved it, but my husband is a beef eater so I only gave it four stars.
