    I made this pretty much exactly as stated below...except I added 4 ounces of grated vermont white cheddar cheese, parsley and chives. I made this for mothers day with a lox spread and a rather large potato pancake...it was a HIT! Very easy, thanks Rocco!

    Very Easy to prepare - came out great from the pan - you can use a variety of veggies and it was very tasty too!
