Ingredients

Root Beer Sauce:

  • 3 (12-ounce) bottles root beer
  • 1/4 cup sugar

Sundae:

  • 1 quart vanilla ice cream
  • 6 root beer flavored hard candies
  • 1 cup whipped topping
  • 3 sugar cones, broken into medium sized pieces
  • 4 maraschino cherries

Directions

Bring root beer and sugar to a boil in heavy medium saucepan over high heat. Reduce heat to low and simmer for 45 minutes or until mixture has reduce by 3/4 and is syrupy. Remove from heat and allow sauce to cool to room temperature.

Place the root beer candies in a plastic re-sealable freezer bag. Lay the bag flat on a hard surface and cover with a hand towel. Using a meat mallet or hammer crush the candies to a course consistency.

Scoop ice cream into 4 sundae dishes. Spoon 1/4 cup of the root beer sauce over each dish of ice cream. Top the each sundae with a heaping dollop of whipped topping. Sprinkle with sugar cone chips and crushed root beer candies. Place a cherry on top and serve immediately.

    I made this for my husband. It turned out wonderfully! It took about 1 1/2 hours to reduce to a syrup consistency. I knew it was there when I took the spoon out after stirring and the residual liquid began to form a syrup on the spoon.

    I used the exact measurements from the recipe, but made whipped cream from whipping cream. I also was not able to find root beer hard candies, but I found root beer jelly beans. I added two on top with the cherry. So cute!

    The syrup almost became candy when mixed with the ice cream. I will definitely take the time to do this again!

    I think the problem that the other reviewers may have had with the root beer not turning to syrup was that it took a very long time to happen. I had to cook it for more than twice as long as the recipe said but it was well worth it. It made a fabulous sauce that is so unusual, delicious, and definitely different than anything you can buy in the store. If you have the time to put into this, I highly recommend it!!
