Place chicken in a large 5 or 6-quart slow cooker. Top with onions, taco seasoning, chipotle and tomatoes (undrained). Cover and cook for 3 to 4 hours on HIGH or 4 to 6 hours on LOW until chicken is very tender and can be easily pulled apart. Shred chicken pieces using two forks. Discard bones. Serve in tortillas with favorite toppings.
