When Talk Show Host Sally Jessy Raphael wanted to learn how to make risotto, she went to the right place. For her risotto recipe, B. likes to use a short grain rice called Aborio. It is primarily grown in Italy and is readily available and when cooked slowly, adding small amounts of liquid has a wonderful texture. Rice is a great source of complex carbohydrates. It is also low in sodium and fat. Rice is classified by its size - Long grain, Medium grain and Short grain. Long grain rice is about 4 or 5 times it's width. It comes in both white and brown varieties. Basmati is a type of long grain rice from India. Long grain rice cooks up light and separates easily. Medium grain rice is shorter and moister than long grain rice, but not as starchy as short grain. It cooks up fluffy - but when it cools down can become clumpy. Short grain rice is a fatter, almost round grain. It's higher in starch and cooks up moister, stickier and creamier than long or medium grain rice. Mochi is Japanese short grain rice.
