    this is great to have on hand.. no more Bisquick. I don't refrigerate it because I don't refrigerate shortening. It should be fine stored as you would a box of Jiffy or Bisquick I would think. We make so many waffles it doesn't stick around very long anyway.

    How long can this keep? Because of the shortening, does it have to be refrigerated?

    I would like to take this mix with me when we go camping. If I seal the mixture in a vaccum bag, how long will the mixture last?
    Also, if the mix is not refridgerated, will the shortening go rancid and once mixed how long will the baking powder remain "fresh"??

    This is a great mix and it serves many purposes.

    To answer the question about recipes for this mix, I searched for Bisquick recipes on the web.

    Barb, occasionally I have had something not rise that had the right amounts of ingredients, including the baking powder. I learned the hard way to make sure my baking powder is not out of date. I have found that it is pretty delicate and if it is out of date at all, I will toss it and buy new. You may check the can. Also, I have added a little more baking powder than a recipe called for to give it a little extra rise. You may try checking the date and adding more b. powder. Good luck.

    i made up a batch of baking mix to use for making pancakes. the mix didnt fluff at all. is there a reason this could have happened

    I made a full batch of the baking mix and used what I needed for the zucchini cakes which were delicious and very easy to make. I would like more uses for this mix especially seeing that it can be made in bulk and I have more.
