Ingredients
- 1 cup pineapple juice
- 1 cup low sodium chicken broth
- 1/3 cup orange juice
- 1 tablespoon butter
- 1 (6-ounce) box long grain and wild rice mix, with seasoning packet
- 1/4 cup slivered almonds, toasted
Directions
In a saucepan, bring pineapple juice, broth, orange juice and butter to a boil. Stir in rice and seasoning packet. Bring to a boil.
Cover tightly and reduce heat to medium-low to low. Simmer until all liquid is absorbed, about 25 minutes.
Fluff rice with a fork, stir in almonds and serve.

I didn't really expect it taste this good, but I thought I would try it because I love pineapple. Glad I did, it was excellant. "Thanks for something different to flavor rice.

I have made other recipes for "tropical" flavored rice and this is by far my favorite! I used rice-roni 4 oz box, so had to alter the measurements slightly. I did not toast the almonds - it was great with grilled salmon!
