    Wanted to see what it tasted like before I added the whole bottle. I was glad I did because the ratio must have been off and I ended up just finishing the bottle and eating the peaches the next day for breakfast.

    Maybe I didn't puree my peaches enough. It came out too "chunky". I have found a better way of doing it is to use peach nectar or peach juice if you are looking to make a great Bellini. Also, instead of champagne (sometimes too dry a nice sparkling wine is better.
