This recipe is a hit with my family and at a recent pot luck supper! We make it once a week and it is better the 2nd day. If you need a faster way, use the Rotelle with Lime and Cilantro already in the can!

I like black beans and had all of the ingredients on hand, so I made these tonight with some grilled chicken. They were delicious! I used beans with salt and topped with a bit of sour cream. Everyone loved it, and there are NO leftovers! Thanks Sandra!

My husband and I really liked the taste of these black beans. The only two problems I have with the recipe are that they were too spicy for children and that they were a bit runny. Perhaps if you drained the black beans and the rotel, this wouldn't be as much of an issue, or you could let them simmer longer but then they might be overcooked. Overall, though, they were quite yummy.

These beans are easy and fast. My husband loved them. I would recommend using fresh ingredients, like onion, garlic and cilantro. They are an excellent side dish when you're in a pinch.
