    Can bake the mini cupcakes into 2 8 inch cake pans for 35-40 mins.

    I made these last night as a fun treat for my kids and they loved them -- but so did I! I thought they were easy and delicious. I love the pink frosting, even though it was a bit more involved than I would have liked. Use canned frosting if you prefer. I am dedicated now to making both dinners and desserts that are easy and simple. My "aha" moment came last weekend when I basically fell into bed, exhausted, after cooking in the kitchen from dawn until dusk. I have cooked this way for my family for 10 years and it's high time to make things easier for me so I can have some fun and get to relax too. Delicious cooking should not be hard or stressful -- keep it simple and you will feel so much less stressed. So, yes I give this recipe 5 stars! Thank you Sandra!

    This was easy and a nice lighter cupcake, not overly sweet. Good for a luncheon, but even my kids and my neighbor's kids liked it. I thought the icing was too much work though. So I bought canned frosting (fluffy style, cream cheese and mixed with puree. I dipped the cupcakes in it just lake Sandra did with hers. Not as fluffy, perhaps, but still pretty. Skip the food coloring though.

    If I could give it no stars I would. I went by the recipe and it was awful. The cupcake was melted in your mouth not in a good way. The icing was stiff until I added the vanilla and the strawberries then the icing went foaming. I went by the recipe so I do not see anything that I could have done wrong. Plus they had no real flavor even though I used one pound of strawberries there really wasn't much of a taste.

    I would NOT recommend this recipe!!!
