    This is a delicious recipe, and SO easy! I have made it many times with chicken breasts as well as pork loin. I usually make extra sauce, the whole can of enchilada sauce and the whole package of taco seasoning. I add cayenne pepper for heat. It's great for a big group and the chipotle slaw is a perfect complement. Sometimes I make a black bean & corn salsa in addition. My guests are always impressed with the flavors and I have never told them it's just enchilada sauce and taco seasoning!

    I often cook boneless pork lion,roast and ribs in the crock pot.This slaw sounds good too but I would also make the famous southern slaw with vinegar,sugar and some oil along with spices.

    I made this slaw for a pork carnita recipe I pulled from American's Test Kitchen. The pork was labor intensive but very good. I don't think the dish would have been as successful without Sandra's slaw. This slaw made the Tacos!!! I plan to try the pork in this recipe next time.

    I followed the recipe but added lil extra enchalada sauce lil over 1/2 cp but i used 2 pork lions. I accidently added the rest of the taco seasoning package to the sauce, I was worried but it actually had wonderful flavor and it wasnt over powering. My family loved it so much they even said it was better then the restarants.Im making it again tonight but might try the crockpot this time so I can pull it apart. This is a keeper. :-

    Pork was delicious and juicy! We did however decide to skip the slaw just because it has been so hot lately. We didn't want anything cream or mayo based. We topped the pork with chopped cilantro, onions, tomatos,and lime!!! We also made some spicy guacomole to spread on the insige of the corn tortillas. YUM!

    I had my husband throw the pork in the smoker for about 15 minutes-then slowly cooked it in the oven for a couple of hours. I used a green enchilada sauce (that's what was in the cupboard!, and it was delicious. The spicy slaw was very good...added fresh avacado as a topping, and some cilantro rice with beans. Very good, if I do say so myself! :

    I just made this recipe tonight, and it vanished quickly! Everyone especially loved the homemade coleslaw (I chopped my own cabbage and shaved carrots. It was quick and easy to prep, and a very yummy and unique dinner with company.
