    i tried this recipe but in a crock pot turned out great was very moist and i also shredded the meat to put in tacos kids loved it taste even better the next day.
    also i added some ancho chili powder and some cumin for additional spice i used about a teaspoon each. also made my own enchilada sauce.which may be why it was moist.

    This recipe was very good. I thought the pork should have been shredded instead of sliced.

    This was a great dinner the first night, although the tortillas fell apart too easy. There was plenty leftover for another meal (only 2 of us in the house. I cut up all the pork loin and put in a dish with the leftover sauce. After a couple days of marinating in the sauce, all I can say is the leftovers were more amazing the the main dish. I also cooked the tortillas this time instead of steaming them, much better.

    I must admit I had my doubts, but this was really good! I used the Emeril recipe for enchilada sauce, but otherwise kept to the recipe, except I added some chicken broth (1/4 cup to the pan for moisture. I didn't use as much hot sauce in the slaw; a little at a time until it was hot enough. My kids ate it up. We topped the tacos with chopped onion and cilantro. Yum. There was nothing left! Thank you for a new recipe.

    Next time I will do this in the crock pot- otherwise it was good (but needed the coleslaw. I didnt have the lime seasoning but used extra lime juice so maybe it needs it?

    I didn't have pork roast so I used a whole turkey. Also instead of cilantro and onions I used a bread stuffing mix with celery and chicken stock. I was also unable to get hot sauce and the enchilada marinade so I just used melted butter and garlic. Instead of cabbage I shredded 2 kinds of fresh lettuce, added tomatoes, cucumbers and radish and created a quick, light and tasty spring salad. Low and behold and to much of my chagrin I was also missing the corn tortillas, so I threw some flaky croissants in a 350 degree oven for 13 minutes. I also added a side of mashed garlic potatoes with butter and chives. Yummy! My kids went back for thirds and my boyfriends mom raved for months! My great grandparents, who died nearly 12 years ago from coronary artery disease, probably would have loved this recipe because they enjoyed Thanksgiving. My daughters best friends cousins older brothers dentists mechanic is allergic to radishes so we would have left them out of his salad. Other than that, enjoy this quick and easy taco recipe.

    Yummy! I didn't have cilantro and I used at least twice as much enchilada sauce but my tenderloin was a little larger than called for. I also did not have chili-lime seasoning so I used a little chili powder along with the lime juice. I used texas pete hot sauce--probably close to 1 tablespoon. I really just seasoned the slaw to taste since others had commented on it being too spicy. My husband had one taco with the slaw and one with regular taco condiments because he was a little skeptical. He said the one with the slaw was actually the best even though this was not expected. I will definately make this again!

    I used regular pork loin, mixed the sauce in the bottom of the crock pot and cooked it on low for about 7 hours. Pulled out the pork, shredded it and mixed it back into the sauce.

    I then rolled into warm tortillas with asiago cheese, pinto beans and home jalapeno salsa, my friends went nuts.

    This dish was ready in no time and was reallt goood.Pork was tender and flavourful.I didnt find it spicy (but im indian...so i doubt a couple of tbsp of chipotle sauce will do itMy suggestion is to try this recipe at least once...you will save this in your recipe box for sure!!!!

    After watching this show on Monday, I thought why not make this for Cinco de Mayo the following day. I followed her recipe ingredients exactly but made two tenderloins, used the entire can of sauce and had to find a recipe for the chile lime seasonings. The only person in my house who likes slaw is my husband BUT everyone enjoyed this one. Great recipe with fabulous results!
