Cashew Chicken Salad

Directions

1/4-pound cooked chicken strips
1 (12-ounce) container cole slaw
1 (8.5-ounce) can mandarin oranges in light syrup, drained
1/3 cup cashews, chopped
1 tablespoon olive oil, optional
 

Slice chicken strips diagonally. In a bowl, toss together all ingredients. Reserve some cashews for garnish and serve.

Sorry I hate when people change a recipe and rate it but I did cause I think it would have been good original way also. I didn't have mandarins so i used pineapple chunks and added some chopped green onion to the top as garnish and like a rater stated I used vadalia onion dressing instead of oil but used about 1/4 cup. This variation was exceelent and my husband loved it and so did I. I thihk it would be good with grilled chicken also. GASP! I totally LOVED this EASY EASY recipe. BEST THING I EVER MADE. I made my own cole slaw with Marzetti dressing - and I recommend not doing TOO much of the dressing since the juice from the Mandarin oranges mushes it up as well. Mmmmmmmmmm.Thank you Sandra.
