Cashew Chicken Salad

Directions

1/4-pound cooked chicken strips
1 (12-ounce) container cole slaw
1 (8.5-ounce) can mandarin oranges in light syrup, drained
1/3 cup cashews, chopped
1 tablespoon olive oil, optional
 

Slice chicken strips diagonally. In a bowl, toss together all ingredients. Reserve some cashews for garnish and serve.

    I liked this recipe very much and I didn't change a thing. Light and refreshing!
    Sorry I hate when people change a recipe and rate it but I did cause I think it would have been good original way also. I didn't have mandarins so i used pineapple chunks and added some chopped green onion to the top as garnish and like a rater stated I used vadalia onion dressing instead of oil but used about 1/4 cup. This variation was exceelent and my husband loved it and so did I. I thihk it would be good with grilled chicken also. Just an over all good recipe to add what you want. thanks Sandra and your are soooo pretty, love yoru show!
    I make this all the time but instead of the oil for the dressing I use either poppyseed dressing or vidalia onion dressing and people rave over it!
     
    GASP! I totally LOVED this EASY EASY recipe. BEST THING I EVER MADE. I made my own cole slaw with Marzetti dressing - and I recommend not doing TOO much of the dressing since the juice from the Mandarin oranges mushes it up as well. Mmmmmmmmmm.Thank you Sandra. I'm trying the Guava chicken tonight (with Gauva paste?).
    terrible. I used a good cole slaw (Rudolph's) and it still turned out to be pretty disgusting. My husband absolutely hated the mandarin oranges in it.
    my family loved this recipe. i made it for a big family get together and its a hit at all the picnics i go to and pot lucks. planning on making it for the 4th
    Made this for my Spa party and everyone loved it. It was so easy. I prepared it right before my guests arrived. It took 5 min., awesome!

    What a waste. Didn't taste fresh. Tasted worse than a bad fast food salad.
     
    Salads -- especially summer ones -- should taste frresh and this one tasted like it came out of a can or something. DISAPPOINTING.
    to a traditional picnic dish. I agree that you must us the right coleslaw and don't forget to add the cashews just before serving.

    Not even as good as McDonalds. The similar salad at McDonalds tastes fresher and has better dressing.
    I served this for lunch and my husband just laughed at me. He wouldn't even try it. I ate a bit but I have to admit it was a bad idea. The mayonnaise in the slaw just serves to slime everything else up and the taste isn't that great.
    I added some toasted sesame seeds which added a nice flavor.
    I added some chinese crunchy noodles too. It was good! If it tastes like fast food to you, maybe try it with a different cole slaw next time. I used KFC's and it was great :)
    I used my own recipe for cole slaw and broiled my chicken. Big time keeper.
    It sounded so weird I just had to try it but I'm sorry I did. I insisted the kids finish their portions because I hate wasting food. It all looks the same in their stomachs I guess.
    I made these for a tray of sandwiches for the super bowl. BIG hit. I added lots of freshly ground black pepper.
    Very tasty. This keeps great in the fridge for a few days for lunches too. This is a great base recipe in itself but you can add things to make it different if you keep some onhand. I added some mandarin oranges today for lunch and some crispy Chinese baked noodles.
    I was not impressed. It would be a lot healthier for you if you used poached chicken. Probably would taste better too.
    This tasted nothing like take out food to us. I think it depends on the quality of the cole slaw you are using. This is yummo!
