i have made this before but this time i did a little tweaking. i used half cream and half stock. actually baked the potato instead of microwaving it. added a little bacon grease, sour cream, sharp cheddar cheese and a dash of hot sauce. came out UH-MAZ-ING!!! love this soup!!!!

So simply. I switched out the canned cheddar cheese soup and used Velveta's Mexican cheddar cheese. Spicy and yummy! My husband loved it. Recommended it to several friends and relatives.

Quickest, delicious soup I've made! Didn't use the sour cream, because my family isn't big on it so much, and I added a couple of spices to taste! Genius recipe for quick dinners!

I am a stay at home mom and try several of her recipes a week and I love this one! I did not use the sour cream and green onion and just sprinkled bits of bacon on top instead. Saved money and looked just as good!

I read over this recipe, and also noted other comments. The only change I made was adding another potato to give the soup more substance. This was amazingly good and simple. I used the bacon bits, and at first thought it wasn't going to be good. But I let it simmer for a little while longer, and it was amazing. Had plenty of leftovers, and it was even better the next day. The garnishes are wonderful, but it was very good without them. This has now become a staple at my house..easy to fix, easy to take to work for lunch, etc. THANK YOU, SANDRA!!

I used real bacon, added a lot more potatoes and a little real cheddar cheese. It comes together so fast and everyone I've made it for loves it. It's not your 4 hour homemade soup but it's great for a quick, warm meal. The garnishes are very important, don't leave them off.

Kathy in Long Bottom, OH from Cathy in Chillicothe, OH: Are you clicking on "Get Recipe Card" in the box. It is in a box to the right of the recipe. It gives you options for different size cards and unless it is extremely long recipe it should print on one page. I like the lighter version potato soup. Will make again.

This recipe looked like something easy enough I could even make. Turned out yummy! However, I must admit I'm lazy, I used bacon bits instead.
