I really liked this, but next time would probably use ground beef or no meat at all It's probably just me, but I didn't care for the chicken in the burrito. But, the beans with this pineapple salsa was sooo good! And easy!

A quick, very simple recepie. Made it with four split breasts instead of a whole chicken. Hade more than enough for the entire family. The wife and I loved the salsa. Will save the broth for taco soup tomorrow.

the pineapple salsa was awesome. it reminds of of Chiptole's sauce that we get for our burritos. however we will add more pineapple to the mix and not dice them up so finely. i made extra sauce and i find that it tastes not only great that night, but better after a few days in the fridge, i guess allowing it to sit and soak in all the juices. it is excellent. I also found that cooking a whole chicken and taking it apart that night has really saved time for two meals with my family. i would have never thought of saving the broth of the chicken... loved the idea. now i always make this meal for two dinners. I'm so happy this show is on!!!

Tried this recipe exactly as written tonight and, while it was tasty as is, it is definitely more work than it is worth to boil the chicken and save the broth. I think it would have even tasted better if I had used store bought rotisserie chicken or home oven roasted chicken. Much quicker too! Plus, with prices in my area, I think it actually would have been cheaper to go with the store bought. Just something to think about. Again, the burrito was very good and we will make it again with some modifications.

This is a 'make again'. My family loved it!. I used leftover roast chicken and pinto beans as my family likes them better than black beans. The sweet/hot salsa was great with the chicken.

Wasn't sure if I would like the pineapple salsa or not, but it was actually excellent. I used a rotisserie chicken which made it a lot quicker (and not much more expensive. I also combined the white and dark meat to make it go further. Yielded much more than 4 servings.
