    Delicious, and super easy to make! I double the amount of cajun because my family like spicy food, but cut back on the salt and it was perfect. Definitely I´ll make it again.

    Amazing. Totally delicious for our family's Fat Tuesday meal! And, as one reviewer also said, I can't really see much that's unhealthy (a surprise since it's so good. I'm totally impressed, very easy. Tons of flavor, just spicy enough (the cajun seasoning alone was a good spice level for this Montana household so I left out the extra cayenne. I also halved the rice and used brown rice. This recipe is a winner, one of the best I've gotten from Food Network. Try it and you won't be sorry!!

    Loved this recipe....fairly easy once all veggies chopped. I added spicy andouille sausage and shrimp. I increased the rice (brown and liquid. Very spicy + delicious!

    This recipe ROCKED! The family loved it and said I could make whenever I want. Putting it in the dinner rotation permanently! The only changes I made were: less cayenne pepper( I don't like too spicy and added smoked sausage. Thanks for the recipe!

    Yummy recipe! It was a little too spicy for my children even though I omitted the cayenne pepper, but the husband and I loved it. It makes a lot, so it would be perfect for potlucks!

    Great recipe. The protien to carbs is a little low for me so I use 2 1/2lbs of chicken breast cut into bite sized pieces, use brown rice instead of white rice, and up the cajun seasoning to 3 tbls and it taste great. I dont change the liquid amount even though I'm using brown rice but it does take about 40-50 minutes to cook.

    I switched the chicken for andouille chicken sausage, I was heavy handed with the veggies, and I used wild brown rice. Everyone really loved this dish, the broth has lots of flavor, and what's unhealthy in it? Not much.

    I cut down on the chicken and added hot italian sausage. I also added 1 cup chicken broth too. Its very easy and everyone loved it.
