I just made this recipe for my family and we all loved it! The recipe had just the right amount of spice and flavor. I used boneless, skinless chicken breasts and it came out great. I am looking forward to making the Quesadillas tomorrow.

We liked it. Easy to make and delicious. My family doesn't like anything real hot so I reduced the amount of cajun seasoning and didn't add any cayene. They loved it. I also sliced up rounds of smoked sausage, browned them, and added them to the meal. It made a lot more than 4 servings, even after taking out some for the red beans and rice soup-which was also very good. I made this last week and I am making it again, tonight. I see red beans and rice soup in our future (I used black beans instead of kidney

This one was a winner with my family! I cut up and browned a pound of Andouille sausage before the chicken and I also used fire roasted tomatoes. It was delicious and will become my new go to jambalaya recipe. It was also super easy!

Absolutely awesome dish! I sat here for 5 minutes trying to be creative with my words-- but that pretty much sums it up- awesome. Def. a dish that you could use smoked sausages, chicken, pork, etc. I did save the 3 cups as suggested-- so I look forward to the 'round 2' recipes!! :

I had all of the ingredients for this on hand and made it the same day the show aired. Well, I THOUGHT I had all of the ingredients. I found that I didn't have enough chicken, so I went thru my freezer and pulled out a couple of smoked pork chops and some spicy cajun sausage and added it to the chicken. It ended up making a great tasting dish that I will definitely make again! I had hoped to make the red bean and rice soup, but my husband had eaten all of the leftovers before I made it home from work the next day.
