I made this recipe tonight. I cook for myself, so I just used 1 boneless, skinless chicken breast and pounded it out until it was very thin. I decreased the amount of chicken broth to about 1/4 cup for the sauce. I also used juice from a fresh lemon since I already had some in the refrigerator. I saved the leftover gravy to use the next time I make it. This recipe is going into my "favorites." It was light, full of flavor and the lemon made it very refreshing. I served it with roasted vegetables (asparagus, thin potatoes and cauliflower. I'm a diabetic, so this was a great meal with very little carbs. I'll be making this again - definitely!
