Rotisserie chickens are so readily available at supermarkets, so it surprises me that they can even sell canned chicken anymore. Canned chicken has such a tinny taste, and the texture is almost gritty. Substitute shredded rostisserie chicken, and some real mayonnaise.

Okay, my family loved it, and I loved it. however, when making it, I made a few adjustments. instead of mayonnaise, I used miracle whip. I omitted the tarragon, and used fresh chicken. (omitted the tarragon because my mom wouldnt buy any because we wouldnt use it for anything but this...
anyway, with those changes. yummy!!!

I loved it and cant wait to make it again! I cooked some chicken breast myself as the recipe called for caned chicken and that sounds strange to me. I was pleasantly surprised that the fat free mayo does not have a fat free taste. It was my first time using tarragon and enjoyed it. I minced it up very fine and was careful not to use too much. The hole salad was fresh tasting and good the next day as well, just keep it separate from the lettuce.

This is a recipe to revisit again and again; it'll be fun to try with different fruit and nut combinations (next time: strawberries and pecans, while keeping the same great, fresh-tasting dressing. Rather than serving this salad over mixed greens, I served it in whole wheat pitas sliced in half. And I'm very glad I doubled the recipe. Thank you, Sandra!

You need to know what works for you before making something. I knew I didn't mind canned chicken so I made it with that, it was great! If you don't like canned, use fresh!! I also knew I didn't like tarragon (I despise it, in fact So, I simply omitted it! I think this recipe is a great 'base' recipe that allows you to incorperate your likes and try substitutions. As I said, I omitted the tarragon but left everything as is. I didn't follow the written recipe though, I made it like she made it on the show which was to mix all the ingredients (minus the lettuce and then place it on top of the lettuce. I loved it and my husband said "This is the best specialty salad I've had in a long time!"

Since I don't have a crockpot, I made it on the stove. I'm not sure if that was a problem or not, but the rice was mushy.

This was really good; but like all cooking, substitute REAL chicken and anything that you don't like "canned." It's a base to start with. Thanks Sandra

I love the idea of recreating carnival foods at home and these corn dogs are perfect from start to finish. they're so much healthier then what you'd get at the fair, too. I added some taco seasoning to my batter and it gave it a fiesta flavor. Oley!
