This was the first time I tried Rice Pudding and I really enjoyed it. I also used basmati rice because it was all I had in the pantry, used brown sugar instead of white and I also added cranberries. It was a great treat.

This is not a good recipe. It doesn't thicken as described and doesn't have enough chocolate flavor.

Decadent, creamy, lucious and delicious!!!! Marvelous new way to make/eat rice pudding. I made it following the recipe the 1st time and then added shredded coconut and coconut milk in place of one of the cups of coconut milk. I also used a little less sugar since the shredded coconut was sweetened. YUMMMMMM!!!! We love this recipe because the possibilities are endless. Next will try choocolate and peanut butter.

This was an easy recipe to follow but I did change and added other ingredients.

    Changes
    1 cup basmati white rice
    2 cups milk
1 cup vanilla flavored coffee liquid creamer
1/2 cup peanut butter chips (in addition to the chocolate chips
    NO salt
    NO vanilla extract

This came out DELISH! I made the changes based on the ingredients that I had in my pantry. a. I've had short grain white rice pudding before so I wanted to experiment with the basamti rice. It still came out nicely. b. The first person who reviewed this recipe used half and half so I thought why not use vanilla flavored liquid coffee creamer since its the same thing and I didn't have to use vanilla extract. c. I don't use a lot of salt when I cook so I omitted it and did not taste any difference. d. The pudding was delish by itself as chocolate but I had some peanut butter chips and the flavors came out fantastic!

We also had this for supper last night too. My hubby and I do not like chocolate very well at all so I put in butterscotch chips instead. YUMMY!!!!!!! I also added one cup of half and half and added some whipping cream too. Then just used one cup of whole milk. Very good indeed!!!! Hubby said it was a keeper as well. Next time thinking about cutting down sugar and adding white chocolate chips instead. That sounds yummy too or maybe cherry chips or maybe peanut butter chips. hahahahaha very good rice pudding!!!!!!
