Ingredients

  • 2 parts coconut rum (recommended: Bacardi)
  • 5 fresh mint leaves, torn
  • 1 part coconut cream (recommended: Coco Lopez)
  • Splash sweetened lime juice (recommended: Rose's)
  • Club soda
  • Mint sprig, for garnish

Directions

Add ingredients, except club soda, to a cocktail shaker with ice cubes. Shake several times and pour into a chilled high-ball glass. Top with club soda and serve with a sprig of mint to garnish

    This drink was exceptionally good!! I always serve it during my parties and my guests usually request it for the next party. Well done Sandra Lee!

    This recipe is great!!!! loved the combination of mint coconut very tropical!!!!! Will definately make again....did not have the soda and it was still great..Thanks for the great drink Sandra!!:

    I made it last Memorial weekend, and I'm making it again. I didn't use mint last time, but I'm thinking of trying it.

    The club soda cuts down on the sweetness and it's so refreshing. It was such a hit last year, my husband had to run out and get more rum during our party :
