    This is my first ever review, but I loved this recipe. I made this as a side dish (without the chicken and used quinoa. It was delicious and refreshing.

    I love the versatality of this dish. It makes a great vegetarian dish just by ommitting the chicken. I also like replacing the couscous with quinoa. yummy!

    This dish was so amazing. The mint is such a key ingredient ! I used israeli couscous as opposed to the smaller moroccan variety.
    I browned the couscous with olive oil and then added vegetable broth, lemon zest and a bay leaf instead of water. I did omit the cucumbers, garbonzo beans and green onions (did not have themI did add carrots that i diced in the food processor. My father in law who claimed he hated couscous ate most of it! I also only used about a tsp of olive oil, and no chicken!

    Vegetarians can easily omit the chicken and this dish still tastes great. I eat select seafood, and I like to add garlic sauteed shrimp to this dish! This is a great dish for those hot summer days--great variety of flavors and bright citrus punch!

    I've made this salad for several different get togethers and people go crazy for it because it's unexpectedly delicious. If there are leftovers, I make a meal out of a big bowl. I prefer it without the mint and like others who have reviewed this, I agree that you really only need 1/4 cup of olive oil for the dressing.

    This recipe has been a "hit". I make it whenever there is a gathering of some sort of salad theme or BBQS and this one has been always with great feed backs!
    It is easy and quick for moms who are on the go like me. You can either serve it with chicken as Sandra Lee shows but I've also added grilled shrimp and even grilled asparagus in there! Cannot forget the mint leaves that absolutely gives it the mediterranean feel!

    I love this recipe! It's such a quick and easy dish for family parties. I usually like to throw in more vegetables than the recipe calls for because more vegetables never hurt anyone and it makes the dish more flavorful with every bite! Thanks for this delicious salad Sandra!

    The marinade for this is spectacular. The first night I had this, I thought it was good. The next day, it was incredible! I modified this recipe quite a bit only because I didn't have all the ingredients, but that's the great thing about this recipe is that it is so versatile. I left out the chicken to make it vegetarian friendly, cut back the lemon since the artichoke marinade is already tart, and reduced oil to 1/4 cup (and I think you can still cut it back more, used orzo instead of coucous, and parsely instead of mint. My cucumber was really bitter (regular cuke so I had to dig them all out. I'm sure it'd be even better and fresher tasting with good cucumbers in there. If you like artichokes, I recommend doubling the amount. For me, there wasn't nearly enough in there. Love this recipe. You can make all sorts of easy & delicious variations with it.

    I made a few adjustments. I did not use chicken. I did not use mint as I was going to have a lot left over and didn't want the mint to overtake the leftover taste. I added it with each serving. I used whole wheat couscous. Since I didn't have an 11 oz. box, I guessed at the amount of couscous needed. It was delicious. I also took another reviewers suggestion and added feta but sprinkled it on as it was served. I gave this 5 stars because in addition to being so tasty, it is very versatile, easy and COOL!
